Pork chop with vegetables

This dish can be made relatively quickly but if you have time, marinate the pork for at least 20 minutes or more in the refrigerator. You can also substitute the pork with chicken and the steamed vegetables can be adapted to your liking. Serve with a small portion of rice and soy sauce.

What you will need:

  • 2 pork chops
  • 100 g broccoli
  • 100 g cauliflower
  • 1 medium carrot
  • 1 small leek
  • For the marinade
  • 1 tablespoon light soy sauce
  • 1/2 tablespoon lemon juice
  • 1/2 teaspoon brown sugar

Method:

1. Marinate the pork

  • Combine the marinade ingredients, add to the pork; leave for 20 min 

2. Prepare the vegetables

  • Wash the broccoli and cauliflower; break into florets
  • Peel and cut the carrot into batons
  • Slice the leek into rings

3. Cook the meat and vegetables

  • Drain the marinade from the pork
  • Brush the pork with olive oil and grill for 3–4 min each side 
  • Steam the vegetables for 5–6 minor until tender

4. How to serve

  • Cut the pork into strips
  • Serve with rice and soy sauce
