Avocado toast

Avocados are a tasty choice for breakfast or snack at any time of day. This recipe can be adapted by changing the type of bread used and made into a heartier meal by adding a poached or scrambled egg on top.

What you will need:

  • 1 ripe, small avocado
  • 2 slices of rye or sour dough bread
  • 1 tablespoon of chopped fresh coriander leaves
  • Juice of 1/2 a lime
  • Ground black pepper
  • Sea salt
  • Chilli flakes to taste (optional)
  • Couple of basil leaves (optional)

Method:

1. Prepare the avocado

  • Cut the avocado around the middle on a flat surface
  • Squeeze gently to remove the stone and use a fork to get the flesh into a small bowl
  • Mash the avocado in the bowl with the lime juice and seasonings

2. Toast the bread

  • Toast your bread to your liking.
  • There is no need to butter or put other spreads on your toast, but if you do, make sure you only use a little

3. How to serve

  • Spread the avocado mix on to the toast
  • Sprinkle chilli flakes and place the basil leaves on top if you are using
